Abstract

Straw mushroom (Volvariella volvacea) is widely consumed due to its high nutritional value and low fat content. However, its production in Jember Regency has declined in recent years, partly due to the reduced availability of rice straw—the main cultivation medium—caused by agricultural land conversion. This study aimed to utilize organic waste such as tofu dregs and sawdust as alternative media components, combined with sucrose to support the energy needs for mycelium growth and fruit body development. The research was conducted from January to February 2025 in Mangaran Village, Ajung District, Jember Regency. A factorial Completely Randomized Design (CRD) was used with two factors: media composition (100% rice straw; 75% rice straw + 25% tofu dregs; 75% rice straw + 25% sawdust) and sucrose concentration (0%, 1.5%, 3%, 4.5%). The results showed that the interaction between media composition and sucrose concentration significantly affected harvest time, total number of fruit bodies, and total fruit body weight. The best results were obtained from the combination of 100% rice straw and 3% sucrose. This study concludes that organic waste and sucrose can support more productive and sustainable straw mushroom cultivation and offer alternative, more accessible raw materials for mushroom farmers
